Quick-Cooking Over Rolled Oats

The texture from the oats gives these rolls such an amazing texture. I chose to use quick-cooking oats, which are smaller-textured; instead of rolled oats for this recipe.

This is to prevent the rolls from bring overly chunky. But if you want to try using rolled oats, go ahead and try it out.

Ingredients

  • Instant yeast: helps making these rolls even quicker.
  • Melted butter: only a small amount to add flavor.
  • Water
  • Cane sugar/regular sugar: adds a lightly sweet taste which enhances the overall flavor.
  • Quick cooking oats: game changer – the small texture of these oats adds an amazing chewiness to these rolls.
  • All-purpose flour and bread flour: the blend of these two flours helps to give the rolls structure as well as a light texture.

Ingredients
  

  • 2 1/4 tsp instant yeast
  • 1 tbsp melted butter
  • 1 1/4 cups lukewarm water
  • 1/2 tbsp cane sugar
  • 1/4 cup quick-cooking oats
  • 1 cup all-purpose flour
  • 1 1/4 cups bread flour *and an extra tablespoon if needed*
  • Optional – egg white for egg wash
  • 1 tsp salt

Instructions
 

  • In large bowl combine the yeast, lukewarm water, and sugar. Let sit for 5 minutes till foamy..
  • Add in the salt, oats, and flour. Knead on lightly floured surface for 10 minutes until smooth (or you can use your bread machine if you prefer)
    *If kneading by hand, sprinkle some flour over the dough if it’s still a little too sticky*
  • Place the ball dough back into the bowl, cover it with a kitchen towel, and let it sit for 20 minutes.
  • After that; deflate dough and place on lightly floured surface. Divide equally in 6 portions for medium size rolls.
    *If you’d like your rolls smaller – divide into 8 portions. 4 portions for very large rolls*
  • Preheat oven to 375 degrees. Form the dough into balls and place on parchment lined baking sheet. Lightly flatten. Cover the pan and let dough sit for an extra 15-20 minutes until almost double in size.
  • Place rolls in oven and bake for 18-20 minutes or until browned to your liking. *If using the egg wash (before baking) combine an egg white with 1/4 tsp water. Brush gently over the dough*
