These muffin ingredients speak for themselves. Moreover, they’re full of good-for-you nutrition. Check them out:

  • All-purpose Flour
  • Spelt Flour (or regular flour if preferred)
  • Baking Powder
  • Baking Soda
  • Salt
  • Mini Chocolate Chips: I prefer to use mini chocolate chips in most of my baking recipes. They’re easier to distribute due to their smaller size.
  • Vanilla Extract – This is essential in most baking recipes.
  • Apple Cider Vinegar: When I leave it out, my baked goods don’t seem to rise as much.
  • Almond Butter: The distinct nutty flavor of this nut butter goes well with the chocolate chips.
  • Cinnamon: You can omit it, but I feel It adds a nice subtle cinnamon flavor to these muffins.
  • Milk: I used dairy-free almond milk, but you can use also use regular milk if you prefer.

Ingredients
  

  • 1 1/4 cups all-purpose flour
  • 1/2 cup spelt or all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup dairy-free or regular mini chocolate chips
  • 1/2 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 2 tbsp creamy almond butter
  • 1/4 tsp cinnamon (optional)
  • 1/4 cup and 2 1/2 tablespoons cane sugar
  • 1 cup and 2 1/2 tablespoons dairy-free or regular milk

Instructions
 

  • In a large mixing bowl thoroughly combine all the dry ingredients (flours, baking powder + soda, salt, and cinnamon if using).
  • Add in the chocolate chips and wet ingredients (milk, vinegar, vanilla extract, and almond butter). Combine just till mostly smooth with a few smallish lumps.
  • Divide batter equally between 10 greased muffin cavities (top with a few more chocolate chips if desired). Bake at 350 degrees for around 22 minutes.
