Hello, have you been sleeping on Greek yogurt in your pancakes? I know I have! Honestly, these cinnamon Greek yogurt pancakes will have your tastebuds jumping for joy; no lie.. I first became aware of Greek yogurt pancakes through Fit Foodie Selma on Instagram. You should check out her amazing recipes by the way.

In addition to this recipe, I have this healthy and vegan chocolate oatmeal pancake recipe; and also this vegan spelt flour pancake recipe. Both so delicious.

Simple and Easy to Make

First of all and most importantly, these pancakes are so easy to make. This is not a cliché. They really are! You only need one bowl and a few simple ingredients that you probably have on hand already. How does that sound, for starters?

Moreover, would you believe that you need only a few basic ingredients to make them? I know, I know; it sounds unbelievable. But compared to the amount of ingredients in most boxed pancake mixes, making your pancakes from scratch is the way to go.

Why Greek Yogurt?

As mentioned earlier, I saw a Greek yogurt pancake recipe on Instagram that intrigued me. To be honest, I really didn’t know what of adding Greek yogurt to pancakes. But as the saying goes “don’t knock it till you try it”. So I tried it (the recipe) one morning.

Can you believe my utter shock after discovering how moist the pancakes were? I could only contribute it to the Greek yogurt. Soon thereafter, I did some research on the benefits of adding Greek yogurt to your favorite recipes.

Greek Yogurt Health Benefits

Turns out that Greek yogurt is beneficial for your health as well. You can use it in place of oil or butter most of the time. In addition, you can even reduce the amount of oil or butter in a recipe by replacing most of it with Greek yogurt.

Last of all, it adds a lot of moisture to your favorite desserts such as cakes and muffins. And you can even make brownies more healthier by replacing some of the butter needed with it, without much difference in taste.

Ingredients

If you’re curious as to what ingredients you need to make these pancakes, here they are:

  • All-Purpose Flour
  • Baking Powder
  • Baking Soda
  • Salt
  • Cinnamon: I added this on a whim, and am so glad I did. Adds so much subtle flavor!
  • Sugar: You only need to add a couple of teaspoons.
  • Vanilla Extract: Believe me, you want to add this in. Because it adds more depth to the flavor of the pancakes.
  • Oil (organic canola, vegetable, etc.) You honestly don’t need to even add any if you don’t want to. It’s such a small amount, therefore it’s optional. I just chose to add in a couple of teaspoons to give the pancakes more flavor and moisture.
  • Greek Yogurt: Oftentimes I use low fat Greek yogurt in my recipes. But if you prefer, full-fat will work also.
  • Milk: As with most of my recipes, you can choose to use dairy-free or dairy milk – suitable to your dietary needs.

These Greek yogurt pancakes are absolutely moist and so delicious! On the plus side, you only need a few simple ingredients to make them.

Ingredients
  

  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 2 tsp sugar (optional)
  • 1/4 tsp vanilla extract
  • 1/2 tsp oil (vegetable oil, organic canola oil, etc.) You don’t even have to add any oil if you prefer not to.
  • 1/2 cup Greek yogurt (low-fat preferably, but full-fat can be used)
  • 1/4 cup and 1 tbsp dairy-free or regular milk

Instructions
 

  • In large bowl combine all the dry ingredients thoroughly (flour – sugar).
  • Add in all wet ingredients (vanilla extract – milk). Make sure everything is combined thoroughly. A few small lumps are completely normal.
  • In greased or oiled frying pan on low-medium heat, fry pancake for about 2 minutes on the first side – and for another couple of minutes on the other side. Serve with your favorite pancake toppings.
