Irresistibly Appetizing

These olive oil drop biscuits have a light crunch on the outside. And yet the inside is so light, fluffy and soft. The extra virgin olive oil adds a light savory flavor to the biscuits, which is quite appealing.

To ensure that the savory taste isn’t too strong, I would recommend that you use a mild olive oil. Otherwise, regular should work fine; and actually should make the biscuits even more delicious.

They’re Absolutely Melt In Your Mouth

These mouthwatering biscuits are pure melt in your mouth goodness! And absolutely scrumptious. My favorite way to eat them, is with a little butter and jam. You can top them with what you usually top regular biscuits with.

About Drop Biscuits

For most of my life, I’ve never even heard of drop biscuits. Up until a couple of years ago, in fact. I’ve only heard of the traditional way of making them. You know – make the dough, then roll it out and cut it kind.

Don’t get me wrong – biscuits are one of my favorite foods to eat. But I wasn’t really a fan of all that went into making them.

So imagine my delight upon finding out about drop biscuits and how easy they are to make! And they taste just like a regular biscuit, with almost the same texture. I would say that drop biscuits are just a tad more fluffier.

How To Make Drop Biscuits: A Super Easy Process

Drop biscuits are super easy to make. Even a beginner baker would have no issues making them. In other words: they’re hard to mess up.

The process involves combining the flour with the other dry ingredients first. Then you cut in the butter with a pastry cutter (see example here) while it’s still cold.

Or you can use a fork or other utensil in place of the pastry cutter. There are also other drop biscuit recipes where you can just add melted butter instead.

This olive oil drop biscuits recipe is one of those. No worrying about having to cut in any butter at all.

After adding in the butter and usually milk, you’re good to go. The last step involves using a spoon to scoop out the dough and dropping it onto a baking pan. Hence the name ‘drop biscuits’.

A couple of Minor Differences Between Drop Biscuits and Traditional (or Regular) Biscuits

There’s just a couple differences between drop biscuits and regular biscuits that you’ll find. But they’re nothing major at all.

  • First of all, drop biscuits usually contain more milk (or other liquid) than regular biscuits. This is so you can easily scoop it out of a bowl and onto a baking pan. No kneading needed..
  • Secondly, drop biscuits look very different from regular biscuits. This is because they contain more liquid. And also, there’s no biscuit cutter involved to get that perfect circular shape.

Ingredients
  

Dry Ingredients

  • 2 cups and 2 tbsp all-purpose flour
  • 3/4 tsp salt
  • 2 1/2 tsp baking powder
  • 1 tbsp granulated sugar

Wet Ingredients

  • 4 tbsp extra virgin olive oil
  • 1 cup regular or dairy free milk

Instructions
 

  • First, preheat your oven to 400 degrees. Line a baking sheet with parchment paper.
    Add all of the dry ingredients to a large mixing bowl. Combine well.
  • Add in the wet ingredients. With a fork, combine just until the mixture forms into a soft dough.
    *The oil may clump up. This is fine. It’ll melt into the biscuits as they bake*
  • Scoop out 2 tablespoons worth of dough for each biscuit onto the baking sheet.
  • Bake for about 16 minutes, or a bit longer if needed.
    *Brush the biscuits with a little melted butter right after taking them out of the oven if desired*
