These easiest oatmeal breakfast drop biscuits have a light crunch on the outside. And yet the inside is so light, fluffy and soft. I believe that comes from the oat flour and extra virgin olive oil that they contain.
They do contain butter also, but just a tad. Nothing to make them any less healthier.
In addition, there’s also actual oats (the instant kind) in these biscuits. Just a small amount where its barely detectable. It actually adds even more of a wholesome appeal.

For most of my life, I’ve never even heard of drop biscuits. Up until a couple of years ago, in fact.
I’ve only heard of the traditional way of making them. You know – make the dough, then roll it out and cut it kind.
Don’t get me wrong – biscuits are one of my favorite foods to eat. But I wasn’t really a fan of all that went into making them.
So imagine my delight upon hearing about drop biscuits and how easy they are to make! And they taste just like a regular biscuit, with almost the same texture.
How To Make Drop Biscuits: A Super Easy Process
Drop biscuits are super easy to make. Even a beginner baker would have no issues making them. In other words: they’re hard to mess up.
The process involves combining the flour with the other dry ingredients first. Then you cut in the butter with a pastry cutter (see example here) while it’s still cold.
Or you can use a fork or other utensil in place of the pastry cutter. There are also other drop biscuit recipes where you can just add melted butter instead.
This easiest oatmeal drop biscuits recipe is one of those. No worrying about having to cut in any butter at all.
After adding in the butter and usually milk, you’re good to go. The last step involves using a spoon to scoop out the dough and dropping it onto a baking pan. Hence the name ‘drop biscuits’.
A couple of Minor Differences Between Drop Biscuits and Traditional (or Regular) Biscuits
There’s just a couple differences between drop biscuits and regular biscuits that you’ll find. But they’re nothing major at all.
- First of all, drop biscuits usually contain more milk (or other liquid) than regular biscuits. This is so you can easily scoop it out of a bowl and onto a baking pan. No kneading needed..
- Secondly, drop biscuits look very different from regular biscuits. This is because they contain more liquid. And also, there’s no biscuit cutter involved to get that perfect circular shape.
The drop biscuits will just be a little more soft because they contain more liquid.
Other than that, they both usually have almost the same flaky texture. And you can eat them both topped with the same toppings such as butter, jam, etc.

Easiest Oatmeal Breakfast Drop Biscuits Ingredients
You don’t need a lot of ingredients at all to make these easiest oatmeal breakfast drop biscuits.
In fact, you’re sure to have most, if not all of them on hand already. You may not have oat flour on hand if you don’t use it often, though.
It’s sold at most grocery stores nowadays, usually in the baking aisle. Or you can make your own oat flour by just processing or blending the oats into flour.
- All-Purpose Flour
- Oat Flour
- Quick Cooking Oats (often called instant oats): These oats are more suitable for these biscuits as they have a smaller texture. And the texture won’t stand out as much as to be very noticeable.
- Baking Powder
- Regular Cane Sugar
- Extra Virgin Olive Oil: If you don’t have this on hand, just use a light cooking oil instead.
- Melted Butter (dairy-free or regular)
- Apple Cider Vinegar
- Dairy-Free or Regular Milk

Easiest Oatmeal Breakfast Drop Biscuits
- 1 cup all-purpose flour
- 3/4 cup oat flour
- 1/2 tsp salt
- 1 1/2 tbsp quick cooking oats (instant) *regular oats aren’t the best to use for this recipe*
- 2 1/2 tsp baking powder
- 1 1/2 tsp cane sugar
- 1 tbsp + 2 tsp extra virgin olive oil or you can use another light cooking oil if needed..
- 1 tbsp dairy-free or regular butter (melted)
- 1/2 tsp apple cider vinegar *Please don’t leave out: assists the baking powder in adding even more rise and fluffiness*
- 3/4 cup + 2 tbsp dairy-free or regular milk
- First, preheat your oven to 450 degrees.Add the flour(s), salt, baking powder, sugar, and oats to a large mixing bowl. Combine well.
- Add in the milk, extra virgin olive oil*, and melted butter. Combine just until the mixture forms into a very soft dough.*The oil may clump up. This is fine. It’ll melt into the biscuits as they bake*
- Line a baking sheet with parchment paper.Scoop out 2 tablespoons worth of dough for each biscuit onto the baking sheet.
- Bake for 12-15 minutes*, or a couple minutes longer if you want them to be more browned. Enjoy!*Brush the biscuits with a little melted butter right after taking them out of the oven if desired*
