This perfect vegan lemon coconut mug cake is exactly that: perfect! I see plenty of recipes online everyday that are labeled as such. And I’m sure they are as described.

But I didn’t intend on labeling any of my recipes in that manner. That’s because there are so many amazing recipes out there. And I don’t want to state that a recipe is perfect when someone else may think that it’s not. Or find fault with it.

How This Mug Cake Came To Be

But oh my, this little mug cake is a dream. I can’t wait for you to see for yourself why it deserves to be called perfect. First of all, I didn’t think this perfect vegan lemon coconut mug cake would taste like much.

I actually had saved half a lemon (leftover from another recipe attempt). After debating on how to use the lemon, I decided to create a mug cake recipe with it. But, I also had some unsweetened shredded coconut on hand. So I decided to combine the two – which resulted in this lemon coconut mug cake.

Unexpectedly Perfect

As I stated earlier, I didn’t really expect for this mug cake to taste anything but ordinary. After I combined all the ingredients together, I tasted the batter. It tasted very basic to me. But I put it in the oven to bake anyway.

After letting the mug cake cool down a little, I decided to add a simple glaze to it. A couple of minutes later, I took my first bite. Oh wow, the lemon-coconut flavor was incredible! And the texture? Fluffy as could be, and perfectly moist.

After debating in my mind on calling this mug cake ‘perfect‘ – I decided to go ahead with it. After all, I think that this perfect vegan lemon coconut mug cake is indeed perfect. And I hope you will think so too. By the way – this mug cake is super easy to make as well.

You don’t need many ingredients to make this perfect vegan lemon coconut mug cake. It can easily serve one – two people:

  • Flour (Regular All-Purpose): I haven’t tried this recipe with any other flour.
  • Baking Powder
  • Baking Soda
  • Sugar (Regular Cane Sugar)
  • Salt: Just a dash is needed.
  • Shredded Coconut (Unsweetened coconut flakes)
  • Oil: Only a teaspoon of oil is needed for this recipe. Just omit the oil for a *still* delicious oil-free mug cake.
  • Freshly Squeezed Lemon Juice (1/2 Lemon): I prefer the natural and fresh flavor of lemon juice straight from a lemon. If you prefer not to use a lemon, just use 1 tablespoon lemon juice.
  • Vanilla Extract: I wanted to add a little vanilla extract to heighten the overall flavor of the mug cake. But not too much to clash with the lemon taste.
  • Apple Cider Vinegar: ACV really helps a cake to rise very well. It assists the baking powder/soda in leavening this cake.
  • Milk: Since this mug cake is vegan, any unsweetened dairy-free milk almond/soy) should work. This includes light coconut milk. But if you prefer, just use regular milk (non-vegan).

  • 1/2 cup and 1/2 tbsp all-purpose flour
  • 1/2 tbsp baking powder
  • 1/4 tbsp baking soda
  • 1/2 tbsp and 1 1/2 tsp cane sugar
  • Dash of salt
  • 1/2 tbsp unsweetened shredded coconut flakes/finely shredded coconut
  • 1 tsp oil (organic canola/vegetable)
  • 1/2 lemon (freshly squeezed – make sure to remove seeds!) Or 1 tbsp lemon juice
  • 1/4 tsp vanilla extract
  • 1/4 cup and 1 tbsp milk *Add an extra 1/2-1 teaspoon milk if needed*


  • Preheat oven to 350 degrees, and grease or oil small-medium ramekin. In small bowl, thoroughly combine all of the dry ingredients (flour-coconut).
  • Add in the remaining ingredients (oil-milk). Combine until mostly smooth. Some small lumps may remain..
  • Bake mug cake for 30-32 minutes. *Check in the middle with a toothpick to make sure it’s well baked*
  • Let the mug cake cool for a few minutes before adding the glaze (optional).
    Glaze: Combine 1 tbsp powdered sugar, 1/8 tsp vanilla extract, and 1/4 tsp milk (with a fork) until smooth.
    Drizzle over the mug cake, and sprinkle with a bit of shredded coconut if desired. Let the cake sit for a couple more minutes so the glaze can set. Enjoy!
