Vegan Whole-Grain Healthy Pancakes

These healthy vegan whole-grain pancakes are so delicious. They’re actually the first pancake recipe that I created. I have a chocolate oat pancake recipe also, if you’d like to check it out.

Here’s another easy vegan pancake recipe (not my own) that I tried in the past, and the pancakes come out so fluffy and delicious.

Regarding this recipe, I wanted to start out on the right foot by creating a healthy pancake recipe that contains nutritious ingredients. In truth, I felt inadequate while trying to figure out what ingredients to use and how much of each for this recipe. But in the end, the pancakes turned out perfectly.

A Little Backstory

It took a good long while for me to get over the mindset that I couldn’t create my own recipes. For years until very recently, I would look online for a recipe if I desired to make a certain dish or dessert. I’ve always loved cooking and baking, but I never felt capable enough to create a recipe of my very own.

Regretfully, I ate all kinds of junk food when I was younger. Honestly I regret it now. But thank God, as I got older I become more health conscious and strived to eat healthier. Now it’s my desire to create recipes that are healthy and delicious at the same time.

Ingredients Needed

To make these healthy vegan pancakes, you only need a few simple ingredients. You don’t need a lot of ingredients to make homemade pancakes. It’s a shame to see the amount of artificial ingredients in most boxed pancake mixes in the grocery store!

  • Spelt flour: I love using spelt flour in a lot of my baking recipes. It’s a healthy and nutty flavored light whole-grain flour that can be used in cakes, cookies, etc.
  • A bit of salt
  • Baking powder
  • Flax egg: A vegan alternative for an egg (a tablespoon of ground flaxseed and 3 tablespoons of water combined together and left to sit for a few minutes until an egg-like consistency)
  • Dairy-free milk: Oftentimes I use unsweetened almond milk in my recipes. But you can use regular milk if you prefer.
  • Coconut sugar: I love using coconut sugar in a lot of my baking recipes; but because of its caramel flavor – it doesn’t work well with all ingredients. Therefore I use cane sugar in some of my recipes.

Vegan Whole-Grain Healthy Pancakes

  • 1 cup spelt flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 flax egg – combine 1 tbsp ground flaxseed with 3 tablespoons water. Let sit for 5 minutes.
  • 3/4 cup dairy-free milk or sub regular milk if non-vegan
  • 1 tbsp coconut sugar or sub regular sugar if non-vegan


  • After whisking all the dry ingredients together; add in the wet ingredients (milk and egg), and combine gently just until there’s a smooth batter. You can choose to add in a small handful of fresh fruit, chocolate chips, etc.
  • In a lightly oiled frying pan; fry the pancakes for two minutes, and after flipping it – fry for a minute more until lightly browned. Serve with your favorite pancake toppings.
