It also won’t hurt that your house will smell amazing while they’re baking. But most of all: you can’t tell there’s zero eggs in these cupcakes. You’ll find they’re just as moist, fluffy and delicious as if they contain eggs.

Another big plus with these cupcakes, is that there’s only a small amount of oil in them. Yet that small amount doesn’t take away from the texture or taste in any way.

Along with this cupcake recipe, I’ve also created an easy cinnamon buttercream recipe for the cupcakes. This buttercream is very easy to make, and the cinnamon flavor compliments the flavor of the cupcakes.

In addition, this buttercream is healthier than most buttercream recipes due to its only containing 2 tablespoons of butter. That’s right! You won’t miss on flavor despite this, because it tastes as rich as any other buttercream.

Of course you can use whatever flavor buttercream or frosting you’d like. I’m sure these cupcakes would even taste great with a vanilla flavored buttercream frosting.

Super Simple Cupcake Recipe

When I set out to create this recipe, I wanted it to be very simple for anyone to do. Also, I kept in mind that not everyone is an experienced baker. And may be in the learning phase(s) of baking.

Fortunately you only need one bowl and some basic simple ingredients to make these cupcakes. They’re also an easy fun activity for kids to do as well – with a little supervision and guidance.

How to Make These Eggless Cinnamon Cupcakes:

As mentioned, you only need one large bowl to make these cupcakes (apart from the buttercream, of course). Why use more bowls than you really need, right?

Of course, there are some recipes that require you to use more than one bowl; but not this particular one. This recipe is easy to follow: You’re going to add all of your dry ingredients to the bowl first. Then combine till everything’s nicely incorporated.

After that, you’ll add in the remaining wet ingredients. Then you’ll combine the wet and dry ingredients just until the batter comes together. The batter won’t be completely lump-free. As long as there’s no really large lumps, you’re good to go.

Now, onto the fun part: putting the batter in the muffin pan, then baking those muffins! Make sure you let the muffins cool completely before frosting them. If you don’t, the buttercream will likely melt into the cupcakes, which is what we don’t want..

How to Make the Cinnamon Buttercream Frosting:

This buttercream is absolutely delicious, and it’s so easy to make. There’s really no steps to making it. All you have to do is add all of the ingredients to a large bowl, then use a hand mixer to combine them together.

The only thing is to make sure that the buttercream is completely smooth and lump-free. Therefore you’ll have to mix it for about 2-3 minutes until then. That’s pretty much it.

Eggless One-Bowl Cinnamon Cupcakes Ingredients

Following is all of the ingredients you’ll need to make these super yummy cinnamon cupcakes. I’m sure you have most of them on hand already. But it’s always good practice to make sure you have everything beforehand.

  • All-Purpose Flour
  • Salt (helps to balance out the sweetness from the sugar, and to add flavor)
  • Ground Cinnamon
  • Baking Powder
  • Baking Soda
  • Granulated (or cane) Sugar
  • Vanilla Extract
  • Apple Cider Vinegar (helps the cupcakes to rise more, and have structure; since there’s no eggs)
  • Oil (you can use organic canola, vegetable oil, etc.)
  • Milk (dairy or dairy-free)

Cinnamon Buttercream Ingredients

  • Powdered Sugar
  • Softened Butter
  • Ground Cinnamon
  • Vanilla Extract
  • Dairy or Dairy-Free Milk

Ingredients
  

  • 1 3/4 cups + 2 extra tbsp all-purpose flour
  • 1/2-3/4 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup + 3 1/2 tbsp granulated sugar
  • 1/2 tsp apple cider vinegar
  • 2 1/2 tbsp light cooking oil organic canola, vegetable, etc.
  • 1 cup + 6 1/2 tbsp milk (dairy or dairy-free)

Instructions
 

  • Preheat your oven to 350 degrees. Line 12 muffin cavities with liners, then lightly spray them with oil to prevent sticking. Set aside.
  • Add the first six (dry) ingredients to a large mixing bowl. Combine very well until all large lumps are gone.
    *You can achieve this better by using a stainless steel fork, or by sifting them together*
  • Add in the remaining wet ingredients. Make sure to combine all the ingredients together until the batter is mostly smooth.
    Some remaining smallish lumps are normal.
  • Divide the batter between the 12 muffin cavities (make sure you line them first).
    Bake for 22 – 22 1/2 minutes until fully baked throughout. Cool completely before frosting..
  • Cinnamon Buttercream Frosting Instructions:
    Add 1 1/2 cups powdered sugar, 2 tbsp softened butter, 1/4 tsp cinnamon, 1/4 tsp vanilla extract, and 1 tbsp + 2 tsp milk to a large bowl.
    Using a hand mixer, beat on medium-high for 2-3 minutes until completely smooth. Voila!
