- 3/4 cup all-purpose flour
- 2 tbsp cocoa powder
- Dash salt
- 1 tsp baking powder
- 1 1/2 tbsp quick-cooking oats
- 1/2 tbsp cornstarch
- 2 tbsp coconut sugar
- 1/4 tsp vanilla extract
- 2 tsp oil
- 3/4 cup and 2 tsp unsweetened dairy-free milk or regular milk for non-vegans
Combine all of the dry ingredients first in a large mixing bowl.
Add in the wet ingredients and combine just till the batter is mostly smooth.
In a lightly oiled frying pan on low-medium heat; fry the pancakes for two minutes on the first side, and for an extra minute on the other side.
Top pancakes with your favorites such as maple syrup, a little butter, etc..
