These healthy vegan chocolate cornbread waffles are absolutely delicious and full of rich chocolate flavor.

- 1/3 cup cornmeal (fine-textured is best - but feel free to try coarse)
- 1/3 cup and 1/2 tbsp all-purpose flour
- 1 1/2 tbsp cocoa powder
- 1/4 tsp salt
- 1 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1 1/2 tbsp sugar (coconut, cane sugar, etc)
- 1/2 tbsp cornstarch
- 1 1/2 tsp oil (organic canola, vegetable, etc)
- 1 tsp apple cider vinegar
- 1/2 tsp vanilla extract (optional but highly recommended)
- 1/2 cup and 1 tbsp milk (dairy-free or dairy milk)
In large bowl combine all the dry ingredients thoroughly (cornmeal - cornstarch)
Add in your wet ingredients (oil - milk). Mix (better with a fork) just until all ingredients are combined with a few small lumps.
Time to make your waffles! I used a mini waffle maker and it made 6 waffles. I’m not sure how many waffles a regular size waffle maker would make.
