Easy and Healthy Whole-Wheat Biscuits

These biscuits are healthy and tasty at the same time. And the melt in your mouth texture is incredible!

Equipment

  • 2 3/4 inch biscuit cutter
  • Pastry Cutter

Ingredients
  

  • 1 cup whole-wheat pastry flour (or use all-purpose if necessary)
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tbsp + 2 extra tsp cane sugar
  • 1/2 tbsp baking powder
  • 2 tbsp dairy-free or regular cold butter
  • 1 tbsp extra virgin olive oil or another light cooking oil
  • 1/2 tsp apple cider vinegar
  • 3/4 cup dairy-free or regular milk

Instructions
 

  • Preheat your oven to 425 degrees.
    Combine the flour(s), salt, sugar, and baking powder in a large mixing bowl.
  • Using the pastry cutter, cut the butter into the dough until the mixture resembles coarse crumbs.
    Add in the milk, olive oil, and apple cider vinegar to the flour mixture.
    Stir with a stainless steel fork until the dough starts to come together.
  • Place the dough on a floured surface.
    Gently finish combining the dough with your fingers until everything’s incorporated.
  • Pat the dough (or you can roll it) to an 1/2 inch thickness.
    Using the biscuit cutter (2 3/4 inches), cut out the dough. Reform any excess dough into 1/2 inch thickness to cut out the rest of the biscuits.
    (You should be able to form 8 biscuits from the dough)
  • Add the biscuits to a parchment-lined baking sheet. Brush gently with a little butter (optional).
    Bake for 12 - 13 minutes, or an extra minute or so if you want them to be more browned.
  • Immediately brush the tops of the biscuits with a little butter after removing them from the oven. 
    This will help soften the crust a bit and will add more flavor. The crust should still have a little crunch to it though..
  • Serve while still warm with jam or whatever other toppings you’re in the mood for. Enjoy!
