Easy Whole-Grain Cheddar Rolls

- 1 1/4 cups warm water (around 110 degrees) (also the back of the yeast packet will tell you the exact temperature for the water)
- 1 packet instant yeast
- 1 tbsp melted butter/or a non-dairy butter alternative
- 1 tbsp cane sugar
- 1 - 1 1/4 tsp salt (start off with 1 tsp, and add an extra 1/4 tsp if desired)
- 3/4 cup whole-wheat flour
- 2 cups all-purpose flour + 2 extra tbsp and 1 tsp extra/add up to a 1/2 tbsp more flour if needed..
- 1/2 cup shredded cheddar cheese/or a non-dairy shredded cheese alternative
- 1 tsp (extra virgin) olive oil
- 1 egg white for the egg white wash
To a large bowl, add your warm water, sugar, yeast, and melted butter. Stir well.
Add in the salt, flours, and cheese. Combine with a fork until a soft dough forms.Add the dough to a floured surface and knead for 10 minutes. *After 5 minutes, knead the olive oil in* The dough should only be lightly sticky, but workable. If you absolutely have to, sprinkle a little more flour over it and continue kneading.*I haven’t tried it, but I’m sure you can use a bread machine if you want to - for the 10 minutes knead time - just don’t forget to add in the olive oil after the 5 minutes* Oil or grease the large bowl, then add the kneaded dough back into it. Cover the bowl (not tightly!), and let it sit for 45 minutes until the yeast rises or doubles in size.
After the 45 minutes, on a floured surface; divide the dough into 12 pieces.After rolling each piece into a ball, place the balls close together on a large parchment-lined baking sheet. Just close enough where the edges are touching each other..Preheat your oven to 350 degrees. Cover the pan, and allow the balls of dough to sit for 25 minutes. This will allow them to double in size, and become fluffy and light. If you’d like to add more shredded cheddar on top, brush the tops of the dough lightly with an egg white wash (egg white + 1/2 tsp water), then sprinkle with the cheese.*For vegans - just use a melted non-dairy butter alternative to brush the tops of the dough (balls) before sprinkling with the cheese* Bake the rolls for 22-24 minutes until browned to your liking. If you’d like - brush the tops of the dough with a little more melted butter after you take them out of the oven. This will give a nice shine to them.
