Ingredients
  

Dry Ingredients

  • 1 cup oat flour store brought, or homemade should work
  • 1/2 cup and 2 tbsp all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 1/4 cup and 1 1/2 tbsp regular sugar or substitute 1/2 cup coconut sugar

Wet Ingredients

  • 1 tsp vanilla extract
  • 2 tsp apple cider vinegar
  • 4 tbsp extra virgin olive oil or substitute 4 tbsp regular oil, or even half of each oil
  • 1 cup dairy-free milk (or use regular milk)

Instructions
 

  • Preheat oven to 350 degrees. Grease or oil an 8 inch round baking pan, and set aside.
  • In large bowl, combine all of the dry ingredients very thoroughly.
  • Add in all of the wet ingredients. Combine just until most of the large floury lumps are gone (some smallish lumps will remain).
    Allow the batter to sit for 5 minutes, until it thickens slightly.
    *You may see some bubbles in the batter. This is only from the vinegar reacting with the baking soda*
  • Pour batter into the prepared baking pan. Bake about 31 minutes, or until tested with a toothpick.
  • Use your own frosting or this simple (healthier) vanilla frosting recipe:
    Add 1 cup powdered sugar, 1 1/2 tbsp softened butter, 1/2 tsp vanilla extract and 2 1/2 tsp milk (dairy or dairy-free) to a large mixing bowl.
    Using a hand mixer on high speed, combine the ingredients until very smooth (for about 2-3 minutes or an extra minute if needed).
