Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup and 2 tbsp sugar
  • 2 tbsp oil (organic canola, vegetable oil, etc.)
  • 3/4 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 1/2 tsp almond extract
  • 1 1/4 cups and 2 tbsp milk dairy or dairy free

Instructions
 

  • Preheat your oven to 350 degrees. Grease and set aside a square 8x8 inch baking pan.
  • In a large mixing bowl, add all the dry ingredients (flour - sugar).
    Combine thoroughly or sift together to make sure there’s no large lumps.
  • Add in the wet ingredients (butter - milk). Don’t over-mix - just combine the batter till it’s mostly smooth.
    The batter shouldn’t contain any large lumps. Just a few smallish ones - which is completely normal.
  • Add the batter to the greased baking pan, and bake from 32-34 minutes. Make sure you test with a toothpick also..
    *Let the cake cool before frosting it*
  • Vanilla Almond Frosting:
    To a large bowl add 1 cup + 1 tbsp powdered sugar, 1/4 tsp almond extract, 1/2 tsp vanilla extract, 2 tbsp softened butter, and 1/2 tbsp + 1 tsp milk.
    *As with the cake, you can choose to use non-dairy or regular milk and butter*
    Beat on medium-high with a hand mixer for 2-3 minutes until very smooth. If necessary, add another 1/2 tsp milk.
    *Note: You can always double the ingredients if you’d like more frosting for the cake*
