Ingredients

  • 1 cup warm water make sure it’s between 110-115 degrees
  • 1/4 cup unsweetened nondairy milk (almond milk, soy milk, etc.)
  • 1 1/2 tbsp sugar or pure maple syrup add a couple more tsp if desired
  • 2 1/4 tsp or 1 packet active dry yeast (can also use instant yeast)
  • 2 tbsp extra virgin olive oil or regular organic canola oil, vegetable oil, etc.
  • 1 1/4 tsp salt
  • 1 cup whole wheat flour or substitute regular flour if necessary
  • 2 cups all-purpose flour

Instructions

  • In a large bowl; combine the warm water, active dry yeast and sugar (or maple syrup).
Let the mixture sit for 5 minutes until the yeast turns foamy.
If the mixture doesn’t turn foamy, you most likely need fresher yeast..
  • Add in the salt, extra virgin olive oil and flour(s). If using instant yeast, add it in now with the water mixture. You don’t have to let it sit for the 5 minutes.
Combine the ingredients with a fork until the dough starts to come together.
  • Place the dough on a floured surface and knead for 8-10 minutes until the dough is smooth and only slightly sticky.
Or you should be able to use a bread machine to combine the dough ingredients.
After the dough is kneaded, form it into a ball shape.
    Notes:
If the dough is still a little stiff, you may need to add in a bit more water. On the other hand, if the dough is too wet, add a little more flour.
If you use only all-purpose flour, you may need to add a little more water, if the dough is still a bit stiff.
  • Oil or grease the bowl that you took the dough out of. Return the ball of dough back to the bowl. Roll it around until it’s coated in the oil or grease.
Cover the bowl loosely with a kitchen towel, and let the dough rest for an hour until double in size.
  • After the hour is up, deflate the dough. Place it on a floured surface and divide into seven pieces.
Roll each piece into a ball, then place on a parchment-lined baking sheet.
Press down on each ball until it’s flatter. Cover the dough loosely with a kitchen towel, and let it sit for 35 minutes.
  • After the second rise, brush the tops of the buns lightly with nondairy milk. This will add moisture and a nice golden brown color to the crust.
Bake the buns at 375 degrees for 5 minutes. After the five minutes, turn down the heat to 375 degrees. Bake them for 18-20 more minutes until the crust is lightly browned.
  • After removing the buns from the oven, you can brush the tops with a little melted nondairy butter. This will add richness and a nice shine to them.
