Ingredients
  

  • 1 cup spelt flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 flax egg - combine 1 tbsp ground flaxseed with 3 tablespoons water. Let sit for 5 minutes.
  • 3/4 cup dairy-free milk or sub regular milk if non-vegan
  • 1 tbsp coconut sugar or sub regular sugar if non-vegan

Instructions
 

  • After whisking all the dry ingredients together; add in the wet ingredients (milk and egg), and combine gently just until there’s a smooth batter. You can choose to add in a small handful of fresh fruit, chocolate chips, etc.
  • In a lightly oiled frying pan; fry the pancakes for two minutes, and after flipping it - fry for a minute more until lightly browned. Serve with your favorite pancake toppings.
