Yellow Rice With Beans

This flavorful yellow beans and rice is the perfect side dish to add to almost any meal. Or it can even be eaten as a main meal.

Ingredients
  

  • 1/2 cup + 1 tbsp water
  • 1 tbsp extra virgin olive oil
  • 1 1/2 cups chicken or vegetable broth or water *Use unsalted broth if you have any sodium restrictions*
  • 1 cup brown rice (rinsed and drained)
  • 1/4 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt **Start out with the 1/2 tsp of salt. You can add in a little extra later on (to taste) if you want to**
  • 1/2 tsp turmeric
  • 15 oz can black beans (drained and rinsed) You can leave the beans out if you wish

Instructions
 

  • Add the water, broth, salt, and extra virgin olive oil to a saucepan. Bring it to a boil on high heat.
    Turn the heat down to low, and then add in the rice along with the garlic powder, onion powder, and turmeric powder.
  • Turn up the heat to high again to bring the water/rice to a boil, then cover the pot; and turn the heat down to low.
    Allow the rice to cook for 45 - 46 minutes* or until any excess water is gone (evaporated).
    **Depending on the brand of rice you use, the cooking time may be shorter/longer. But overall, you want all of the liquid to be gone**
  • *After the rice finishes cooking, heat the beans for a couple of minutes in the microwave (or on the stove). Then immediately add the heated beans on top of the cooked rice*
    Cover the rice for five minutes, so the rice can steam a little and be more fluffier. Afterwards, fluff the rice and beans together. Add a pinch more salt if needed..
    *Optional - For optimal flavor, serve the rice topped with freshly chopped green onion before serving*
