Chocolate Cornbread You Say?
I know many of you are wondering if you read the title of this recipe correctly. Well, let me assure you that you did read it correctly. In fact, I’ve been contemplating creating these chocolate cornbread waffles for a while now.
I make cornbread often because it’s so yummy and easy to make (I always look forward to the leftovers). And I enjoy eating chocolate as well, on occasion.
Therefore I decided to combine the two together into waffles. To my surprise, the waffles came out so decadent, fluffy, and deliciously chocolatey!
Adding to that, these waffles are low fat and healthy. Can’t beat that. They’re best served with pure maple syrup and a little butter (or your usual waffle toppings).
It’s Easy to Doubt Your Abilities and Creativity
Honestly I couldn’t stop thinking about this chocolate cornbread waffles recipe until I finally took the plunge and set out to create it.
You know, to me it’s really not about having to waste ingredients when a recipe fails (well, sometimes – I can’t lie). It’s not even attempting to create the recipe when it’s begging to be created.
It’s more like God encouraging you to do something. And instead of trusting His guidance, you feel you can’t do it because of already deeming it a failure.
Well, in retrospect it could be turn out to be a failed venture (or recipe for me as a foodblogger) – or it can turn out to be one of your greatest successes. So I say “trust God and go for it” anyway. You never know, right?
Vegan Chocolate Cornbread Waffles Recipe Ingredients:
- Cornmeal: My favorite cornmeal to use is by Arrowhead Mills. It’s organic and fine textured. I’m not particularly fond of coarse cornmeal, as it’s too grainy for my liking. *But if you want to try using coarse cornmeal, see how it works out for you; and let me know how it goes*
- All-Purpose Flour: You definitely need to balance out the graininess of the cornmeal with regular all-purpose flour.
- Cocoa Powder: Cocoa powder is absolutely a game-changer! It adds a rich chocolate flavor to many dessert/breakfast recipes without adding any unnecessary fat, sodium, sugar, etc.
- Salt: I usually only create recipes that require just a minimal amount of salt.
- Baking Powder: A very necessary leavening agent.
- Baking Soda: This too is a necessary leavening agent. Otherwise the waffles won’t be nearly as fluffy.
- Sugar: I used organic coconut sugar. Or you can just use regular cane sugar. Additionally, you can leave out the sugar altogether if you prefer. I just wanted to add a touch of sweetness to the batter.
- Cornstarch: Since these vegan waffles do not contain eggs and only contain a small amount of oil, cornstarch is added to help give the waffles a light crispy texture.
- Oil: As stated, there’s only a very small amount of oil in these waffles to add a touch of flavor. You can leave it out if you like to.
- Apple Cider Vinegar: ACV is essential in this recipe as it helps the waffles to not be flat and dense, but to be light and fluffy.
- Vanilla Extract: You definitely want to add this in, as it gives the waffles a richer taste.
- Milk: I usually use unsweetened almond milk in my recipes, though I’m not full vegan. It’s fascinating to me how versatile dairy-free milk is, and you can use it in place of regular milk in most recipes with no loss of flavor/taste. But if you prefer to use regular milk, that’s fine as well.

Decadent Vegan Chocolate Cornbread Waffles
Ingredients
- 1/3 cup cornmeal (fine-textured is best – but feel free to try coarse)
- 1/3 cup and 1/2 tbsp all-purpose flour
- 1 1/2 tbsp cocoa powder
- 1/4 tsp salt
- 1 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1 1/2 tbsp sugar (coconut, cane sugar, etc)
- 1/2 tbsp cornstarch
- 1 1/2 tsp oil (organic canola, vegetable, etc)
- 1 tsp apple cider vinegar
- 1/2 tsp vanilla extract (optional but highly recommended)
- 1/2 cup and 1 tbsp milk (dairy-free or dairy milk)
Instructions
- In large bowl combine all the dry ingredients thoroughly (cornmeal – cornstarch)
- Add in your wet ingredients (oil – milk). Mix (better with a fork) just until all ingredients are combined with a few small lumps.
- Time to make your waffles! I used a mini waffle maker and it made 6 waffles. I’m not sure how many waffles a regular size waffle maker would make.
