Before starting out on my recipe creating journey, I tried out this easy vegan French toast recipe by Nora Cooks. It was my first time making vegan French toast, and I was pretty impressed. I had previously thought you absolutely needed eggs to make French toast, but her recipe proved me wrong.
It’s traditionally known that the main ingredient for non-vegan French toast is the *eggs*. So it came as a complete shock to me that you can make French toast without any eggs. And it tastes just as delicious as non-vegan French toast.
No Eggs Needed
This healthy and easy vegan French toast recipe truly is both healthy and easy to make. And it will please the palates of vegans and also non-vegans alike. Honestly, you can’t tell it’s made without eggs. What makes this recipe healthy, is that it’s way lower in cholesterol. By the way, did you know that a single egg (yolk) contains close to 200 mg of cholesterol?
But that’s not to say that eggs are bad for you. It’s just that they should be eaten in moderation as with many foods. To clarify, I read this article on WebMd.com. It states that the average person should add no more than 300 mg of cholesterol to their diet daily. On the other hand, those who are at risk for heart attack or stroke, etc. should add no more than 200 mg daily.
Tastes Just Like Regular French Toast
For those of you who are watching your cholesterol intake, don’t worry! This healthy and easy vegan French toast recipe is for anyone who enjoys eating French toast.
You get that classic lightly crispy outside and a soft chewy inside. And the yellow color comes from turmeric (amazing, right?). Nothing artificial here, folks!
Vegan French Toast Recipe Ingredients:
You only need seven ingredients to make this healthy and easy French toast recipe. And only one bowl is required – which makes it even better.
- Unsweetened Dairy-Free Milk: I used unsweetened almond milk. Or if you prefer, just use regular milk.
- Pure Maple Syrup: You only need a tbsp. It’s just to sweeten the French toast batter some.
- Ground Flaxseed: One of my faves. This helps the batter to thicken and resemble an actual French toast batter.
- Vanilla Extract: No French toast recipe is complete without this. It definitely adds a lot of flavor.
- Cinnamon: This one’s a given. But you can leave it out if you prefer..
- Cornstarch: This is most often used in vegan French toast and waffle recipes. It’s helps to give the outside that classic crispy texture.
- Turmeric: You can add a yellow color to many foods with this. And it’s a natural coloring – not artificial.

Easy and Healthy Vegan French Toast Recipe
Ingredients
- 1 cup unsweetened dairy-free milk (or if you prefer, just use regular milk)
- 1 tbsp pure maple syrup
- 1 tbsp ground flaxseed
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tbsp cornstarch
- 1/2 tsp turmeric (can be optional – but you won’t get that yellow color)
Instructions
- Add all ingredients to a medium-large bowl and combine thoroughly. Let mixture sit for 5-10 minutes until a bit thicker.*Make sure the bread you use is sturdy enough to take the french toast batter, because it’s more liquidy than regular french toast batter*
- Coat both sides of your bread with the batter, then fry two at a time in 1/2 tablespoon of butter in a frying pan – 2 minutes on the first side and about 1 1/2 minutes on the other side until golden brown. *If you need to, just add a little more butter for the second batch* Serve with maple syrup and a little butter. Or whatever toppings you prefer.
