Yes, these mouthwatering spelt and oat bread loaves are truly a delight to feast on! First off, have you ever eaten at Longhorn Steakhouse? You know the bread that they serve you before your meal comes?

Well, it seems that I created an unexpected exact copycat recipe of that bread. I planned to create a wholesome and hearty whole-grain bread with a crusty exterior and a soft interior. And this bread fits that description perfectly.

(And if it happens to taste just like Longhorn bread – all the more better:)

The bread smelled really amazing while baking. And it looked incredibly browned and gorgeous when I took it out of the oven. So you could imagine how full of anticipation I was, to finally taste it.

Pleasantly and Surprisingly Delicious

Oh my gosh, I was so pleasantly pleased with how incredible it tasted! All it needs is a smear of butter, or jam also. Or you can make sandwiches with it, or even toast the next morning.

I kind of got ahead of myself here. I almost forgot to tell you how easy this mouthwatering spelt and oat bread loaves recipe is to make.

Spelt and Oats: A Powerhouse Combination

While creating this bread recipe, I pondered on what flavor profile I wanted it to have. I already had created this easy and yummy honey butter sandwich bread recipe.

And I also had already created this super easy and tasty honey whole-wheat sandwich bread recipe. So I wanted to create a more unique bread other than a white or whole-wheat sandwich bread.

Therefore I decided to combine spelt flour, bread flour, and add some raw oats (quick-cooking) to form the base of this bread.

Thank God it all came together in these amazing tasting spelt and oat bread loaves. I can’t wait for you to see for yourself.

*If you prefer not to use spelt flour, I’m sure white-whole wheat flour; or even all-purpose flour would work well for this bread. I would love to hear how it goes for you*

Italian Style Loaves

Instead of a standard sandwich-style bread for this bread recipe, I chose to shape the bread into 2 Italian-style loaves. With an Italian style bread, you can slice it any way you want to.

In other words, it’ll be great with your evening meal or even served buffet-style. Either way, it’s sure to be a hit with your family or guests.

Simple and Easy to Make Bread Recipe

You would think this mouthwatering spelt and oat bread loaves recipe would be complicated or complex. Rest assured, it is not.

  1. The very first thing you will do, is to combine all of the wet ingredients (water, milk, etc.) in a large bowl. Then you can choose to warm the mixture to around 110 degrees in the microwave or on top of the stove.
  2. You really don’t have to worry about the temp being exact – as long as it’s just before getting too hot. After that, you will add in the oats and yeast. After a few minutes of the mixture sitting, you will add in the flour(s).
  3. After kneading the dough for 10 minutes, it has to sit for an hour to rise. After that 1st rise, you will shape the dough into two loaves; and they will be left to rise for a 1/2 hour.
  4. Finally, after brushing the loaves with an egg wash; they’re ready to be baked. Not bad, right?

Mouthwatering Spelt and Oat Bread Loaves Ingredients

The ingredients that are needed to make this bread are few. If you’re not sure how old your yeast is, just make sure to buy fresh yeast to be on the safe side.

  • Warm Water
  • Warm Dairy-Free or Regular Milk
  • Honey
  • Extra-Virgin Olive Oil
  • Salt
  • Quick-Cooking Oats (for smaller texture): these oats are recommended as having the best texture for this bread. I haven’t tried using regular rolled oats.
  • Instant Yeast
  • Spelt Flour
  • Bread Flour
  • An Egg (for egg white wash): Or you can just brush the tops of the loaves with melted dairy-free butter for a vegan option.

Ingredients
  

  • 1 cup water
  • 1/2 cup dairy-free or regular milk
  • 1 tbsp + 1 tsp honey
  • 1 1/2 tbsp extra virgin olive oil
  • 1 1/4 tsp salt
  • 1/2 cup quick-cooking oats
  • 1 packet instant yeast (2 1/4 tsp)
  • 1 1/2 cups spelt flour
  • 1 3/4 cups and 3 tbsp bread flour (if dough is still sticky – add in a couple more tsp of bread flour while kneading)

Instructions
 

  • To a large mixing bowl, add all of the wet ingredients (water – olive oil). In your microwave or on top of the stove, warm the mixture to around 110 degrees. Or just before it’s very hot.
    Add in the oats and combine the mixture. Then sprinkle the yeast over the mixture, and let it sit for 5-8 minutes till the oats soften some.
  • Add in the salt and both flours. Knead the dough for 10 minutes by hand. Or I’m sure you can get away with using a bread machine..
    If you need to add more flour – just add a tsp at a time until the dough is only slightly sticky..
  • Grease the bowl that you took the dough out of. Return the kneaded dough to the bowl, cover it; and let the dough sit in the bowl for an hour till it rises.
    After the hour is up, on a floured surface; divide the dough into two. Form 2 long rolls, making sure to tuck the ends and seams in.
    Cut about a 1 1/2 inch long slash in the top of each loaf, and cover the loaves. Let them sit for a 1/2 hour.
  • After the 1/2 hour is up, and the loaves have gotten larger; preheat your oven to 375 degrees. Then combine an egg with 1/2 tsp water.
    Brush the tops of the loaves with the egg wash, and sprinkle some oats on top if desired. Bake the loaves for 23-24 minutes until browned. Enjoy!
    *For a pretty shiny crust – brush the loaves with a little melted butter right after you take them out of the oven*
