Quinoa Flakes: A Healthy Substitute For Oats
If you don’t want to use oats for this recipe, you may want to consider using quinoa flakes. Quinoa flakes have a very similar profile to oats, and are also naturally gluten free.

*Make Sure Your Oats and Chocolate Chips are Truly Gluten Free*
Mostly all of the ingredients needed for this recipe are naturally gluten free. Oats are usually gluten free naturally, as well. But do make sure that it states this on the package.
This is because some companies allow their oats to come in contact with other grains that do contain gluten. In addition, make sure that the chocolate chips that you use are gluten free also.
Most manufacturers list this on their product packaging nowadays. The reason for you to check, is because some ingredients that are in the chocolate chips may contain gluten.
The goal is for these cookies to not contain any traces of gluten, for those who need to avoid it.

Dry Ingredients needed
The dry ingredients needed to make these gluten free double chocolate cookies includes:
- Oat flour – one of my favorite flours to use in my baking recipes because it’s healthy. In addition, it works well in a lot of baking recipes. My favorite oat flour brand to use is by Arrowhead Mills. It’s high quality and organic.
- Baking powder
- Baking soda
- Cocoa powder – is naturally fat free and widely used in many baked goods and desserts.
- Quick cooking oats – I usually use rolled oats when baking, but I felt that the smaller texture of the quick-cooking oats would work better in these cookies.
- Ground flaxseed (optional) – I can’t begin to tell you how much I love adding this to many of my recipes. It’s super good for you (contains omega 3s) and you can’t even taste it at all in the final product.
- Light brown sugar or Coconut Sugar – while creating this recipe; I wavered on whether to use regular cane sugar or light brown sugar. In the end I chose the brown sugar, and it worked perfectly in the cookies.
- Mini chocolate chips (dairy-free or regular) – I just prefer the smaller size, but I’m sure regular chocolate chips would also work.
Wet ingredients needed
- A little melted butter (dairy-free or regular) – I try not to use a lot of butter or oil in my recipes in order to keep them healthy.
- Unsweetened Applesauce – Most of the time in my recipes, I use unsweetened applesauce in place of an unhealthy amount of fats such as oil and butter.
- Milk – I usually use dairy free milk when baking. It’s not that I’m vegan, but I respect most aspects of the vegan diet. You can also use regular milk if you prefer.

Gluten Free Double Chocolate Cookies
Ingredients
- 1 cup oat flour make sure it’s gluten free/or use regular for non gluten-free
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/4 cup cocoa powder
- 1/2 cup quick-cooking oats
- 2 tsp ground flaxseed *optional*
- 4 1/2 tbsp light brown sugar or coconut sugar can be substituted
- 1/4 cup mini chocolate chips or 2 tbsp regular, if that’s what you have on hand
- 2 tbsp melted butter
- 1/2 tsp vanilla extract
- 2 tbsp + 1 1/2 tsp unsweetened applesauce
- 1/4 cup and 3 tsp dairy-free or regular milk
Instructions
- Combine all ingredients thoroughly in large bowl. *If you need to, using your hands may help to incorporate the ingredients together more easily..*
- Form into 13 medium-sized cookies and place on a parchment lined baking sheet. Press down slightly on the tops. Top with more chocolate chips if desired..
- Bake for 11 minutes at 350 degrees.
