Or even busy days, if you’d like to make a quick pizza for brunch or even lunch. And since there’s no yeast involved, there’s less time that you have to wait around for the dough to rise.

This whole-wheat pizza dough recipe does include yeast. But not to fear: this is such an easy-to-make pizza dough. And the resulting crust is lightly crispy and soft.
How to Make This Easy Cornmeal Pizza Dough
To reiterate: this pizza dough recipe is super easy to make. First, you’re going to add some warm water to a medium-large bowl.
Next, you will add in all of the other dry ingredients; combining with a fork till a dough forms. Then you will knead the dough a few times to make sure the ingredients are well-incorporated.
The dough should only be slightly sticky. If it’s still too sticky or wet for you, sprinkle a little more flour in.
After the dough is allowed to rest for 20 minutes, it’s ready to be shaped and topped with whatever pizza toppings you desire. Then into the oven it goes!

You only need seven simple ingredients (including the water) to make this cornmeal pizza dough. And if you usually keep cornmeal on hand, you’re pretty much good to go.
As to what kind of cornmeal to use, I would go with mild/medium cornmeal. My favorite is mild, though. Then there’s coarse cornmeal.. If you prefer to use it, then try using it, and see how it goes. I would think it’s more suitable for cornbread, to be honest.
- Cornmeal: Mild cornmeal is best for this pizza dough, but you can definitely use whatever kind you prefer.
- All-Purpose Flour
- Salt
- Baking Powder
- Sugar (only two tsp)
- Extra Virgin Olive Oil
- Water: Make sure it’s lukewarm. It helps to make the dough more easier to work with.

Easy Cornmeal Pizza Dough Recipe
Ingredients
- 1/2 cup warm water
- 1 tbsp extra virgin olive oil
- 1/2 cup cornmeal
- 3/4 cup and 1 1/2 tbsp all-purpose flour (add more only if needed)
- 1 1/4 tsp baking powder
- 1/2 tsp salt
- 2 tsp cane sugar
Instructions
- Preheat your oven to 400 degrees. To a large bowl, add in the warm water and olive oil. Combine well.
- Add in all the dry ingredients (cornmeal – sugar). Combine with fork until soft dough forms. Knead the dough for a few minutes. *Add in a bit more flour if the dough is wet still..*Let the dough sit for 20 minutes in a greased bowl.
- Line a baking sheet or pizza pan with parchment paper. On a floured surface, form the dough into a large pizza crust or two smaller crusts.Place the crust(s) on the parchment-lined pan. Top with pizza sauce and other desired pizza toppings.Bake for 10-12 minutes or until the cheese is melted and toppings are cooked throughout.
I should probably try to make this again before I rate it, but I think I prefer a polenta-like pie crust better because mine was kind of dry. This recipe is very close to one that uses only flour, but becomes excellent when 1/4-1/3c wheat germ is subbed for the same amount of flour. Try that with this recipe- use wheat germ instead of cornmeal, but I’d use no more than 1/3c. It’ll have a wonderful nutty/toasty flavor and aroma, and a lovely golden color especially when brushed with olive oil before baking. I always do because I don’t have an oven, so I shape them into calzones and cook them in a heavy pan. It works great, but if you make a single monster calzone, you’ll need a giant grill spatula to turn it.
