Here’s yet another healthy fall dessert for you. These healthy glazed pumpkin oatmeal cookies are absolutely yummy and nutritious at the same time.

While going back and forth on my next fall recipe to create, my mind kept going back to creating a healthy cookie recipe. So here they are!

And I’m sure you’ll be glad to know that they are also easy to make (one-bowl recipe). Beside the expected pumpkin spices and oats, these cookies contain extra virgin olive oil* for extra flavor and moisture.

*I would just make sure to use a light-tasting olive oil, where you can barely taste it in the cookies*

Another plus is that these cookies are also refined sugar free. They’re sweetened with pure maple syrup instead of regular sugar.

These cookies have more of a cake-like texture. But let me tell you – they’re absolutely so yummy, soft and chewy.

The cookies will be slightly crispy straight out of the oven, but they will soften after being left to sit awhile after glazing. This is when they’re best to be eaten.

On the other hand, the maple glaze/icing really helps these cookies to shine and have even more of amazing flavor.

  • Oats: I suggest using quick-cooking oats. But If you don’t mind more bite and chunkiness to your cookies, use rolled oats.
  • Salt
  • Cinnamon
  • Ground Ginger
  • Cloves or Allspice
  • Baking Powder
  • Baking Soda
  • Canned or Homemade Pumpkin Puree
  • Extra Virgin Olive Oil
  • Vanilla Extract
  • Dairy-Free or Regular Milk

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/4 cup quick-cooking oats/rolled oats *use rolled oats for more bite and a crunchier texture*
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp cloves or allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup pumpkin purée
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp vanilla extract
  • 2 1/2 tbsp dairy-free or regular milk

Instructions
 

  • Preheat your oven to 350 degrees. Also line a baking sheet with parchment paper and set aside.
    In a large mixing bowl, combine all of the ingredients together. After that, cover the bowl and refrigerate the dough for about 25 minutes. This will make it easier to form the cookies..
  • Use around 1 1/2 tbsp of the dough to form the cookies (should be around 12). Flatten the tops slightly or to the thickness you want.
  • After placing the pan in the oven, bake the cookies for around 12 minutes. It’s best not to over bake them.
  • After the cookies have cooled a bit, drizzle with the glaze. After that, let the cookies sit for a couple of minutes for the glaze to set. Enjoy!
    *Remember – the cookies will have the best texture after sitting for an hour or so after glazing them. But if you can’t wait, I definitely understand..*
