You won’t believe how absolutely delicious these moist pumpkin oat flour pancakes are! I would even go as far as to say that they’re perfect to eat anytime of the year.

I just love creating easy pancake recipes. And trying out new flavors for them. It’s major fun to see the result of combining just a few basic ingredients. And of course, homemade just tastes so much better.

You Already Have What You Need

By making your own pancakes from scratch, there’s no icky artificial flavors and ingredients involved. On top of that, it’s amazingly easy to make your own pancakes.

I’m sure you already have the ingredients on hand to make your own pancakes. All it takes is some flour, salt, a little sugar, baking powder, and your choice of non-dairy or regular milk. Told you it’s easy:)

Now, the ingredients above are for a very basic pancake recipe. There are other ingredients you can add to enhance the flavor and texture of homemade pancakes.

Such As..

You can add a little melted butter or oil to add a lot of flavor to your pancakes. And as for the texture – you can add more height and fluffiness by adding in apple cider vinegar.

If all you have is regular vinegar on hand, that should work also. I personally only use apple cider vinegar in my pancake recipes. But I have used regular vinegar in the past with great results.

*Note – this particular pancake recipe doesn’t call for butter or oil, but you can add a couple tsp for extra flavor*

Apple Cider Vinegar: Secret Ingredient For the Fluffiest Pancakes

With most pancake recipes that call for an egg, you don’t really need to add the vinegar. Most of my pancake recipes are non-dairy.

Therefore the apple cider vinegar takes the place of the egg in helping the pancakes to not be flat. And to be as fluffy as possible. How amazing is that?

Perfect Pancake Combo: Oat Flour and Pumpkin Puree

These pancakes contain oat flour and pumpkin purée. This combo guarantees pancakes that are nothing less than melt in your mouth, soft and moist.

In addition, these moist pumpkin oat flour pancakes have a light pumpkin spice flavor that’s not overpowering. It would be so disappointing to eat pancakes that taste too strongly of spice, wouldn’t it?

Oat Flour: Buy or Make Your Own

Oat flour adds a nutritious whole-grain aspect to the pancakes along with a soft texture. I usually use oat flour by Arrowhead Mills. It’s organic and very high quality.

If you have a blender or food processor, you can make your own oat flour from scratch. Just put the amount of oats needed in, and process into flour. Too easy.

Pumpkin Puree: You Can Also Buy or Make Your Own

The addition of pumpkin puree helps these pancakes to be super moist. You only need to add in a small amount of oil or butter, since the puree is already full of moisture.

This is what keeps these moist pumpkin oat flour pancakes healthy as well as yummy. You can purchase canned pumpkin puree or make your own.

It’s more convenient for most people, including myself; to buy pumpkin puree. I recommend that you only buy organic puree. This guarantees that it’s free from any added artificial ingredients or pesticides.

If you want to make your own homemade pumpkin puree, feel free to do that. I’m sure it tastes better than any canned puree out there, including organic.

It’s good to make sure that you have the ingredients you need on hand before making any recipe. This way, there’s no inconvenient last minute having to go to the grocery store.

You may already have all of the ingredients to make these pancakes. But I just wanted to list them for you just in case you’re out of something.

  • Oat Flour
  • All-Purpose Flour
  • Baking Powder
  • Baking Soda
  • Sugar (regular cane)
  • Salt: You only need a small amount.
  • Cinnamon

Ingredients
  

  • 1/2 cup oat flour
  • 1/2 cup all-purpose flour
  • 2 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tsp sugar (optional)
  • 1/2 tsp salt
  • 3/4 – 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • Small pinch each of nutmeg and cloves
  • 1/4 cup + 2 tbsp pumpkin puree
  • 1/4 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 3/4 cup + 2 tbsp dairy-free or regular milk

Instructions
 

  • *To keep your pancakes warm, turn on your oven to 200 degrees.
    And place each pancake on a foil-lined baking sheet as you’re done making them.
    This way, all of the pancakes will be warm when you’re ready to serve them*
  • In a large bowl, add the dry ingredients (flours – cloves) and combine well.
  • Add in the remaining wet ingredients, including the pumpkin puree. 
    Combine just until everything is incorporated well, and any large lumps are gone.
  • Heat a frying pan on low-medium heat. Lightly grease or spray with oil.
    Use a small portion of batter for each pancake (should make around seven medium). Spread into a circular shape.
  • Cook for two minutes on the first side.
    You should see bubbles on the surface, and the pancake should be lightly browned.
    Then flip over and cook an extra minute. Serve with your favorite pancake toppings and enjoy:)
