- 1 1/4 cups all-purpose flour
- 1/2 cup spelt or all-purpose flour
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup dairy-free or regular mini chocolate chips
- 1/2 tsp vanilla extract
- 1 tsp apple cider vinegar
- 2 tbsp creamy almond butter
- 1/4 tsp cinnamon (optional)
- 1/4 cup and 2 1/2 tablespoons cane sugar
- 1 cup and 2 1/2 tablespoons dairy-free or regular milk
In a large mixing bowl thoroughly combine all the dry ingredients (flours, baking powder + soda, salt, and cinnamon if using).
Add in the chocolate chips and wet ingredients (milk, vinegar, vanilla extract, and almond butter). Combine just till mostly smooth with a few smallish lumps.
Divide batter equally between 10 greased muffin cavities (top with a few more chocolate chips if desired). Bake at 350 degrees for around 22 minutes.
