- 1 cup oat flour
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup + 2 tbsp coconut or light brown sugar
- 3 tbsp creamy peanut butter (or similar nut butter)
- 1 tsp vanilla extract
- 1 tsp apple cider vinegar
- 1 3/4 cups + 2 tbsp unsweetened dairy-free or regular milk
First, preheat your oven to 350 degrees. Then moderately grease or oil 12 muffin cavities. Set aside..In a large mixing bowl, combine all of the dry ingredients (flours- baking soda) thoroughly until all large lumps are gone. Next, add the remaining wet ingredients to the dry ingredients. Combine until mostly smooth (some smallish lumps will remain).Divide the batter between the muffin cavities. Bake for 23-25 minutes or until a toothpick comes out clean. Let cool slightly before eating, if you can. Enjoy!
