Scrumptious Almond Butter Oatmeal Cookie Bars

Ingredients
  

  • 1/2 cup oat flour
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 cup dairy-free or regular chocolate chips (optional but highly recommended)
  • 1/4 tsp baking soda
  • 1 1/4 tsp baking powder
  • 1/4 cup and 2 1/2 tbsp coconut (or light brown) sugar. Add an extra tsp or two if needed..
  • 1 1/2 tbsp quick cooking oats
  • 1/2 tsp vanilla extract
  • 1 1/2 tbsp almond butter
  • 3/4 cup and 2 1/2 tbsp milk (dairy free or regular).

Instructions
 

  • Preheat your oven to 350 degrees and grease an 8x8 inch square baking pan. In large mixing bowl combine all of the dry ingredients well (flours-oats) and chocolate chips if using.
  • In a smaller bowl, combine all of the wet ingredients well with a fork (vanilla extract, almond butter and milk).
  • Add the combined wet ingredients to the dry ingredients and stir just until the batter is mostly smooth.
    Add batter to the pan, and top with more chocolate chips if desired. Bake for 20-23 minutes until done. Test by sticking a toothpick or fork in the middle. It should come out clean.
