These scrumptious almond butter oatmeal cookie bars are so good! I mean, you get a chewy soft texture along with the yummiest flavor.

And if you add in chocolate chips (why wouldn’t you?) they’re even more delicious.

In addition to these cookie bars being so delish, they’re also very easy to make. And you only need one bowl to make them, along with just a few simple ingredients. Sounding good to you so far?

I also almost forgot to add that these scrumptious almond butter oatmeal cookie bars are perfect for breakfast or dessert/snack. Psst.. You won’t believe that they’re healthy after tasting them.

Why Are They Called Cookie Bars?

I originally intended for these cookie bars to be cookies. But the dough didn’t quite turn out as I hoped for in order to make cookies with it.

So I added all of the dough to an 8×8 inch square baking pan to bake and cut into bars when finished.

I decided I would call them cookie bars since I planned for them to be cookies from the beginning. They do taste like a soft chewy cookie – but just in a thick(ish) bar form.

This just proves that something good can still come from an error or mistake that we’ve made. It’s not over till it’s truly over, you know?

Sometimes a Pivot (from an original idea) is all it Takes..

I’d just like to think that the cookies were meant to be cookie bars – plain and simple. At least, that’s the way I take it.

They’re a pivot from my original recipe intention, but definitely no less because of it. Have you ever had a similar experience?

Almond Butter vs Peanut Butter

Almond butter is very similar to peanut butter. And they both contain almost the same amount of carbohydrates, calories and fat (source).

The only differences are that almond butter comes from almonds and peanut butter comes from peanuts.

And almond butter also contains omega 3s whereas peanut butter doesn’t. This makes almond butter a little more healthier in fact.

They Can Be Used Interchangeably in Many Recipes..

Moreover, almond butter and peanut butter don’t taste completely the same. But they can often be used interchangeably in most recipes.

I could’ve chosen to make these cookie bars with peanut butter. But I felt that the almond butter would give them a more distinct taste – which it does.

Another Amazing Ingredient: Oat Flour

Along with the almond butter, these cookie bars contain oat flour. Oat flour comes from blending healthy oats into flour.

Nowadays many grocery stores sell oat flour. This is very convenient for those who are short on time or who prefer to just buy it (like me, ahem).

Scrumptious Almond Butter Oatmeal Cookie Bars Ingredients:

These cookie bars contain the best ingredients to help you get your day started on the right foot. Or even to enjoy later on in the day. Either way, I think you’ll find them incredible.

  • Oat Flour: You can make your own or buy it. It’s usually sold in the baking aisle with the other flours.
  • Regular All-Purpose Flour
  • Salt
  • Baking Soda
  • Baking Powder
  • Coconut or Regular Cane Sugar
  • Quick-Cooking Oats: I prefer to use these oats in most of my recipes because they’re smaller than regular oats.
    And you don’t have to worry about soaking them beforehand (to soften them), as with regular oats.
  • Vanilla Extract
  • Almond Butter: It’s better that you use organic peanut butter. Or all-natural peanut butter that doesn’t have anything added to it. Just straight peanuts.
    It’s better for you overall, and doesn’t contain any unnecessary artificial ingredients.
  • Unsweetened Dairy-Free Milk: You can use regular milk instead if you prefer.
  • Chocolate Chips (Dairy-Free or Regular): You don’t have to add them in, but they really add so much yum to these cookie bars.

Ingredients
  

  • 1/2 cup oat flour
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 cup dairy-free or regular chocolate chips (optional but highly recommended)
  • 1/4 tsp baking soda
  • 1 1/4 tsp baking powder
  • 1/4 cup and 2 1/2 tbsp coconut (or light brown) sugar. Add an extra tsp or two if needed..
  • 1 1/2 tbsp quick cooking oats
  • 1/2 tsp vanilla extract
  • 1 1/2 tbsp almond butter
  • 3/4 cup and 2 1/2 tbsp milk (dairy free or regular).

Instructions
 

  • Preheat your oven to 350 degrees and grease an 8×8 inch square baking pan. In large mixing bowl combine all of the dry ingredients well (flours-oats) and chocolate chips if using.
  • In a smaller bowl, combine all of the wet ingredients well with a fork (vanilla extract, almond butter and milk).
  • Add the combined wet ingredients to the dry ingredients and stir just until the batter is mostly smooth.
    Add batter to the pan, and top with more chocolate chips if desired. Bake for 20-23 minutes until done. Test by sticking a toothpick or fork in the middle. It should come out clean.
