- 1 cup whole-wheat pastry flour
- 3/4 cup all-purpose flour
- 2 1/2 tbsp quick cooking oats (use rolled oats if you want a more chunky texture)
- 1/4 - 1/2 cup mini or regular size chocolate chips
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup and 1 tbsp sugar (add an extra tsp if desired)
- 1/2 tsp vanilla extract
- 1/2 tbsp light cooking oil organic canola, vegetable, or light-tasting extra virgin olive oil
- 3/4 tsp apple cider vinegar
- 3/4 cup pumpkin purée
- 3/4 cup dairy-free or regular milk + an extra 1 1/2 tbsp
Preheat your oven to 350 degrees. Grease 10 muffin cavities or liners and set aside.
To a large mixing bowl, add the dry ingredients (flours - sugar). Also add the chocolate chips. Combine thoroughly.
Add in all of the wet ingredients (vanilla extract - milk). Stir just until combined, but not too much. Some tiny lumps are normal..Divide the batter between the 10 muffin cavities/liners. Top with more chocolate chips if desired. Bake for 22-23 minutes until well done. Test with a toothpick to make sure. Let cool a few minutes before eating. Enjoy!
