These vegan protein pancakes are absolutely moist and so delicious! On the plus side, you only need a few simple ingredients to make them.

Ingredients
  

  • 3/4 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp cinnamon (optional)
  • 1/2 tbsp sugar (optional)
  • 1/4 tsp vanilla extract
  • 1 1/2 tsp oil (vegetable oil, organic canola oil, etc.) You don’t even have to add any oil if you prefer not to.
  • 2 tbsp dairy free (or regular) Greek yogurt (low-fat preferably, but full-fat can be used) *preferably room temp for easier incorporating*
  • 3/4 cup and 1/2 tbsp dairy-free or regular milk

Instructions
 

  • In large bowl combine all the dry ingredients thoroughly (flour - sugar).
  • Add in all wet ingredients (vanilla extract - milk). Make sure everything is combined thoroughly. A few small lumps are completely normal.
    (The batter may fizz up some. This is normal, and comes from the baking powder reacting with the baking soda)
  • In greased or oiled frying pan on low-medium heat, fry pancake for about 2 minutes on the first side - and for another couple of minutes on the other side. Serve with your favorite pancake toppings.
