Vegan Protein Pancakes

These vegan protein pancakes are absolutely moist and so delicious! On the plus side, you only need a few simple ingredients to make them.

- 3/4 cup all-purpose flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp cinnamon (optional)
- 1/2 tbsp sugar (optional)
- 1/4 tsp vanilla extract
- 1 1/2 tsp oil (vegetable oil, organic canola oil, etc.) You don’t even have to add any oil if you prefer not to.
- 2 tbsp dairy free (or regular) Greek yogurt (low-fat preferably, but full-fat can be used) *preferably room temp for easier incorporating*
- 3/4 cup and 1/2 tbsp dairy-free or regular milk
In large bowl combine all the dry ingredients thoroughly (flour - sugar).
Add in all wet ingredients (vanilla extract - milk). Make sure everything is combined thoroughly. A few small lumps are completely normal.(The batter may fizz up some. This is normal, and comes from the baking powder reacting with the baking soda) In greased or oiled frying pan on low-medium heat, fry pancake for about 2 minutes on the first side - and for another couple of minutes on the other side. Serve with your favorite pancake toppings.
