Simple and Easy to Make

First and foremost, these pancakes are so easy to make. This is not a cliché. They really are! You only need one bowl and a few simple ingredients that you probably have on hand already. How does that sound, for starters?

Moreover, would you believe that you need only a few basic ingredients to make them? I know, I know – sounds unbelievable. But compared to the amount of ingredients in most boxed pancake mixes, making your pancakes from scratch is the way to go.

Why *Yogurt*?

To be honest, in the beginning I wasn’t too keen on adding yogurt to my pancakes. And honestly, I was ignorant about how good protein is for your body. But as the saying goes don’t knock it till you try it.

Therefore, I attempted to create a pancake recipe with something I never thought I would add: Greek yogurt (dairy-free, of course).

Imagine my utter shock after discovering how moist the pancakes were from adding the yogurt! After that, I did some research on the benefits of adding yogurt to some of your favorite recipes.

Yogurt Health Benefits

Turns out that yogurt is very beneficial for your health. You can use it in place of oil or butter most of the time. In addition, you can reduce the amount of oil or butter in a recipe by replacing a portion of it with yogurt.

Last of all, it helps to add moisture. It can be used in cakes, muffins, brownies, etc. without much difference in taste and flavor.

Non-Vegan Yogurt Option..

Even if you aren’t vegan, there’s no reason why you can’t make these vegan protein pancakes as well. Just easily sub the dairy-free Greek (or regular) yogurt for regular dairy yogurt. Also use regular milk. Too easy, right?

Vegan Protein Pancakes Ingredients:

If you’re curious as to what ingredients you need to make these pancakes, here they are. They’re all basic and simple. You probably have all of them on hand already, in fact.

  • All-Purpose Flour
  • Baking Powder
  • Baking Soda
  • Salt
  • Cinnamon: I added this on a whim, and am so glad I did. Adds so much subtle flavor!
  • Sugar: You only need to add a couple of teaspoons.
  • Vanilla Extract: Believe me, you want to add this in. Because it adds more depth to the flavor of the pancakes.
  • Oil (organic canola, vegetable, etc.) You honestly don’t need to even add any if you don’t want to. It’s such a small amount, therefore it’s optional. I just chose to add in a couple of teaspoons to give the pancakes more flavor and moisture.
  • Dairy-Free Greek (or regular) Yogurt: Either low-fat or full-fat is fine, as they both contain protein. Any dairy-free yogurt such as 365 almond milk yogurt by Whole Foods would work well here. Or even a cashew milk yogurt would work..
  • Unsweetened Dairy-Free Milk: You can choose to use dairy-free (or dairy) milk to suit your dietary needs and/or preferences.

These vegan protein pancakes are absolutely moist and so delicious! On the plus side, you only need a few simple ingredients to make them.

Ingredients
  

  • 3/4 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp cinnamon (optional)
  • 1/2 tbsp sugar (optional)
  • 1/4 tsp vanilla extract
  • 1 1/2 tsp oil (vegetable oil, organic canola oil, etc.) You don’t even have to add any oil if you prefer not to.
  • 2 tbsp dairy free (or regular) Greek yogurt (low-fat preferably, but full-fat can be used) *preferably room temp for easier incorporating*
  • 3/4 cup and 1/2 tbsp dairy-free or regular milk

Instructions
 

  • In large bowl combine all the dry ingredients thoroughly (flour – sugar).
  • Add in all wet ingredients (vanilla extract – milk). Make sure everything is combined thoroughly. A few small lumps are completely normal.
    (The batter may fizz up some. This is normal, and comes from the baking powder reacting with the baking soda)
  • In greased or oiled frying pan on low-medium heat, fry pancake for about 2 minutes on the first side – and for another couple of minutes on the other side. Serve with your favorite pancake toppings.
