I can’t wait for you to try this oat flour cake recipe! It’s simple and super easy to make. In addition, this cake is also so moist and delicious. It also contains extra virgin olive oil, which is a healthy addition.

You can choose to use regular oil, if you prefer; of course. But you won’t regret using the olive oil. You really can’t taste it in the cake, for real! If you’re definitely worried about tasting it, just make sure to use a light (or light tasting) olive oil.

Oat Flour: Comes Naturally From Oats

In fact, did you know that oat flour comes from just blending oats into a powder? Absolutely amazing! Have you ever made your own oat flour before?

Since I am not the proud owner of a high-powered blender as of yet, I resort to just buying my oat flour. The oat flour brand that I use most often, is by Arrowhead Mills.

This company is high on my list, because almost all of their food products are organic. Also, their food products are of very high quality, and don’t contain any chemicals that are harmful or toxic.

This Cake Does Contain a Little All-Purpose Flour Too..

Oat flour is lighter than regular flour, and can give a cake the moistest texture. This, in turn; can cause a cake to be more crumbly and delicate than an average cake. I aimed to maintain that delicate texture without the cake falling apart on you while trying to serve it.

Since all-purpose flour is not as light as oat flour, it helps the texture of a cake to be a bit more stable. Therefore, I tested the oat flour in this cake with a portion of all-purpose flour – with great results.

**Make Sure This Cake is Fully Cooled Before Slicing It**

Since this cake is on the delicate side, it’s best to not cut into it until it’s cooled all the way through. I’ve had the unfortunate experience of impatiently doing this, only for the slice to crumble into pieces.

After waiting till the cake was fully cooled down before slicing it, it was way less crumbly. And it held up better. This cake will still be a bit crumbly because of the oat flour, but it shouldn’t be overly so..

In addition, make sure to slice the cake gently to help prevent it from breaking up, as it’s very tender.

Oat Flour is Definitely Worth Trying Out

As I was saying earlier, there are so many reasons why you should use oat flour more often. If you’ve never tried oat flour, or even heard of it; oftentimes its sold in most health food stores.

In addition, I’ve seen oat flour in a lot of grocery stores as well. It can usually be found on the shelf next to the other flours.

I created this cake recipe only with oat flour in mind. A big reason why, is because I love eating oatmeal. I’m sure many of you do too. Plus, oatmeal comes from oats, so there you go!

All jokes aside, as a child I’ve always enjoyed a warm filling bowl of oats. And I’ve never grew tired of it even to this day.

Deliciously Moist Oat Flour Cake Ingredients:

It really doesn’t take much ingredients to make this oat flour cake. But I’ll list them so you’ll know what you need beforehand.

  • Oat Flour: What’s not to love about it? It’s good for you, adds a pleasant nutty flavor, and benefits your body in so many ways. It also adds moistness to the texture of the cake.
  • All-Purpose Flour: The addition of this flour along with the oat flour, adds lightness to the cake’s texture. It also helps the cake to hold together better.
  • Salt
  • Baking Powder
  • Baking Soda
  • Sugar: Regular sugar, organic cane sugar or even coconut sugar works well in this cake. If using coconut sugar, you may need to add a little more; as it’s less sweet than regular sugar.
  • Vanilla Extract: You only need a small amount to add so much flavor to this cake.
  • Apple Cider Vinegar: This is needed to help the cake rise well, since there’s no eggs in this cake. I wouldn’t advise using white vinegar, as it would affect the taste of the cake due to its higher acidity..
  • Extra Virgin Olive Oil: This oil brings a light savory taste to this cake, and complements the other flavors very well. But if you’d like, or if you’re not sure about using it; just use regular cooking oil.
  • Regular or Unsweetened Non-Dairy Milk

Ingredients
  

Dry Ingredients

  • 1 cup oat flour store brought, or homemade should work
  • 1/2 cup and 2 tbsp all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 1/4 cup and 1 1/2 tbsp regular sugar or substitute 1/2 cup coconut sugar

Wet Ingredients

  • 1 tsp vanilla extract
  • 2 tsp apple cider vinegar
  • 4 tbsp extra virgin olive oil or substitute 4 tbsp regular oil, or even half of each oil
  • 1 cup dairy-free milk (or use regular milk)

Instructions
 

  • Preheat oven to 350 degrees. Grease or oil an 8 inch round baking pan, and set aside.
  • In large bowl, combine all of the dry ingredients very thoroughly.
  • Add in all of the wet ingredients. Combine just until most of the large floury lumps are gone (some smallish lumps will remain).
    Allow the batter to sit for 5 minutes, until it thickens slightly.
    *You may see some bubbles in the batter. This is only from the vinegar reacting with the baking soda*
  • Pour batter into the prepared baking pan. Bake about 31 minutes, or until tested with a toothpick.
  • Use your own frosting or this simple (healthier) vanilla frosting recipe:
    Add 1 cup powdered sugar, 1 1/2 tbsp softened butter, 1/2 tsp vanilla extract and 2 1/2 tsp milk (dairy or dairy-free) to a large mixing bowl.
    Using a hand mixer on high speed, combine the ingredients until very smooth (for about 2-3 minutes or an extra minute if needed).
