How to Make These Quesadillas
As I mentioned earlier, these quesadillas are super easy to prepare. All you basically have to do is combine all of the ingredients (the chicken filling) in a bowl first.
After that, you divide the filling between the tortillas; then top each tortilla with another tortilla before cooking. And that’s pretty much it. Told you it’s too easy…
Healthy Chicken and Cheese Quesadillas Ingredients
These quesadillas are healthy because they contain just chicken, a minimal amount of cheese, and a small amount of sour cream.
As for the tortillas; you can use whatever kind you prefer. I used a corn and flour blend tortilla for this recipe; and they were so tasty, but flour or corn tortillas would work as well.
All the ingredients that you will need to make these quesadillas include:
- Cooked shredded chicken – a rotisserie chicken is perfect for this recipe or you can use your own prepared chicken
- Tortillas – a flour or corn tortilla would work well
- Sour cream – reduced fat options are available to keep these quesadillas on the healthy side
- Chili powder – this one’s a given
- A little salt

Healthy Chicken and Cheese Quesadillas
Ingredients
- 4 corn or flour tortillas
- 1 1/2 cups cooked shredded chicken
- 1/2 cup shredded cheese (Mexican blend or mozzarella)
- 1/4 cup low-fat sour cream
- 1/4 tsp chili powder
- Salt to taste
Instructions
- Preheat oven to 400 degrees. Combine all ingredients together in a bowl.
- Divide the mixture between two of the tortillas and spread it over all of the tortilla.
- After that, place the remaining two tortillas over each of the two tortillas with the chicken mixture. *Brush a little olive oil over each tortilla before baking*
- Bake the tortillas on a foil-lined baking pan; and bake for about 15 minutes until lightly browned. Turn the tortillas over carefully halfway so that both sides will bake evenly.
