Soft Baked Peanut Butter Doughnuts
I didn’t know these soft baked peanut butter doughnuts (aka: donuts) would be so delicious! I can’t wait for you to see how mouthwateringly delicious they are for yourself as well. And whoever you’d like to share them with.
Honestly, don’t be surprised if it’s a struggle for you to share. The soft moist texture of these doughnuts, along with their peanut buttery flavor; is truly incredible.
In addition, the peanut butter glaze adds to the flavor as well. You can omit the glaze, or even use another topping all together. But I think you’ll love the taste of the glaze with these doughnuts.
By the way, you may not be a fan of peanut butter; or may even be allergic to it. In that case, this eggless donut recipe or this oat flour donut recipe may be of interest to you.
FYI: Both of these super easy donut (aka: doughnut) recipes are baked. Which means, you don’t have to feel guilty about eating more than one. And I’m sure you will, because they’re so good. They’re also healthy enough for breakfast.
Why Baked Doughnuts Over Fried Doughnuts?
To date, I have only created baked doughnut recipes for this blog. It is my hope to diversify with a fried doughnut recipe or two in the near future. Especially for those who don’t mind the extra fat/calories every now and then..
I’m sure you came to this recipe because you’re interested in a more healthy way of making doughnuts. Or just out of plain curiosity, because you’ve never eaten a baked doughnut before. Nothing wrong with either scenario.
Well, I can assure you that you won’t regret baking your doughnuts over frying them. First of all, they’re just as delicious as fried doughnuts. The only thing that you’ll probably notice, is the lack of extra richness from the oil. That’s it.
Secondly, they’re just so easier to make; in my opinion. No having to fry multiple batches of doughnuts in hot oil. The main thing you need for baked doughnuts is a doughnut pan to bake them in. In addition to the ingredients and other simple utensils, of course.
Peanut Butter: An Uncommon Flavor for Doughnuts..
Okay, I know peanut butter is not a well known flavor for doughnuts. With this peanut butter doughnuts recipe, I hope to change that.
The thought of making doughnuts with peanut butter just popped into my mind one day. I almost brushed it off at first, to be honest.
Thank God I still went ahead with it, because these doughnuts taste so amazing. Therefore I’ve been so wanting to share this recipe with others.
How to Make These Peanut Butter Doughnuts:
At first glance, it would seem as if it would be complicated to make doughnuts. But it’s pretty easy to make these doughnuts, or any baked doughnuts in general.
What makes baked doughnuts so easy to make, is the super simple method of making them. It’s just a matter of making the doughnut batter, then adding it to the doughnut pan. Easy peasy!
To make these peanut butter doughnuts, you’re going to first combine the dry ingredients together. After that, you’ll add in the wet ingredients; then combine all the ingredients together. Lastly, it’s just a matter of adding the batter to the doughnut pan(s) and baking..
The batter won’t be completely smooth, so don’t worry if there’s some tiny (ish) lumps in there. You definitely don’t want to stir the batter more than necessary, though. It could affect the texture of your doughnuts in a negative way.
Important Tip: When combining the batter, make sure to scrape all of the flour from the bottom of the bowl. This way, all of the ingredients will be evenly distributed and incorporated together.
How to Add Batter to a Doughnut Pan
You may be wondering how to add the batter to the doughnut pan. You have two ways of doing it: use a pastry bag for less mess, or just spooning it in. I choose the latter every time, as it’s more convenient.
The only thing is, it can get a little messy if you don’t take your time doing it. But overall, I prefer this way, as I usually don’t keep pastry bags on hand. If you don’t have a pastry bag, you can use a Ziploc bag instead. Most people keep Ziploc bags, or similar food storage bags on hand.
Just cut off one of the bottom corners of the bag, then add the batter inside of the bag. Then squeeze the batter into the doughnut pan that way. Even though I prefer using a spoon, this way isn’t too bad either. Whatever works best for you..

Soft Baked Peanut Butter Doughnuts
Equipment
- 1 or 2 doughnut pans
Ingredients
- 1 3/4 cups all-purpose flour
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 2 tbsp light brown sugar
- 4 tbsp regular sugar
- 1 1/2 tbsp melted butter
- 3 tbsp creamy peanut butter
- 1/2 tsp vanilla extract
- 1 1/4 cups + 3 tbsp regular or dairy free milk
Peanut Butter Glaze Ingredients
- 3/4 cup powdered sugar
- 1/4 tsp vanilla extract
- 1 1/2 tbsp creamy peanut butter
- 6 tsp milk of your choice
Instructions
- Preheat your oven to 350 degrees. Grease or spray doughnut pan very well so the doughnuts can be removed easily. Set aside.*Most doughnut pans come with six cavities. For this recipe, you’ll need 12 total. Therefore you can use one doughnut pan (twice) or two at the same time to bake the doughnuts*
- Add all of the dry ingredients to a large mixing bowl. This includes the flour thru the sugar. Combine very well.
- Add in the remaining wet ingredients. Combine until the batter is mostly smooth, but not too much. Some small lumps will remain..
- Spoon or squeeze the batter (ziploc bag method) into each greased doughnut cavity. *You don’t want to overfill the cavities, or the doughnuts won’t have holes in the middle. Add the batter just till the cavity is almost full, but not all the way to the top. About 3/4 full*
- Bake for about 15 minutes. Check with a toothpick to make sure they’re ready, if necessary.Remove the doughnuts from the pan, and set them aside to cool fully before glazing them.
Peanut Butter Glaze Instructions
- Add all of the ingredients for the glaze to a medium bowl. Combine with a fork or whisk until completely smooth.
