Einkorn Pancakes
Once you taste these delicious einkorn pancakes, you’ll understand my excitement in sharing this recipe with you.
These pancakes far exceeded my expectations when I set out to create this recipe. I’ve never really worked with einkorn flour before, and I didn’t know how it would work in these pancakes.
*Note: It’s not mandatory for you to use einkorn flour to make these pancakes. You can also use regular whole-wheat flour if you have to, or try using regular flour*
The Texture of These Pancakes is So Incredible
My oh my, I was absolutely surprised at how wholesome and delicious they are. Not to mention, they’re also so fluffy and light with the perfect amount of moisture.
And what makes these pancakes even more delectable is good ol’ butter and pure maple syrup. I’m not talking about the cheap imitation syrups out there, but the real deal.
You know the more expensive syrups in the glass jar or plastic bottle with the little handle on it sometimes? That’s the kind I mean. They’re usually right next to the other imitation syrups.
Pure Maple Syrup vs Regular Imitation Syrup
The taste and flavor of pure maple syrup (example here) just tastes so much more better than regular imitation syrup. And it makes these einkorn pancakes (actually any pancakes) taste extra special.
It’s worth the extra dollar or two to buy pure maple syrup over imitation syrup, because it’s pure. No artificial preservatives or such added.. Have I convinced you to try it now (those of you who haven’t)? I hope so..
So, What’s Einkorn Exactly?
Einkorn is actually a type of flour. A big difference between einkorn and regular flour, is that einkorn flour is way lower in gluten – which helps enable the body to digest it more easily.
There’s actually two varieties of einkorn flour: all-purpose and whole-wheat. For these pancakes, I used whole-wheat einkorn flour.
If you’d like to use all-purpose einkorn flour instead, go right ahead. Or you can just use regular all-purpose or whole-wheat flour if einkorn flour isn’t available where you live. The pancakes are sure to come out good either way.
Einkorn flour is being made more available in grocery stores nowadays due to increasing popularity. You’re more guaranteed to find it at a natural or whole foods store. Or hopefully you can even find it at a regular grocery store where you live.
How to Make These Pancakes..
These einkorn pancakes are easy enough for even kids to make with supervision. And you don’t need multiple bowls either – just one.
- First you’re going to sift all of the dry ingredients together since einkorn flour tends to be lumpy. At least, that was my experience with it.
- Or if not sifting the dry ingredients together, you can just make sure to combine them thoroughly with a fork. Using a fork over a spoon is more effective to break up any large lumps.
- After that, you will add in the remaining wet ingredients. Then combine everything just until the batter is free of any large doughy lumps. Some smallish lumps will remain, which is okay.
- That’s all. Now you can go ahead and make some pancakes!

So you already know by now how easy these pancakes are to make. Here are all the ingredients you will need to make them.
As I mentioned earlier, you can just use regular whole-wheat or even all-purpose flour if you don’t have einkorn flour on hand. Or you don’t feel the need to go out of your way to buy it.
- Einkorn Whole-Wheat Flour: You can also use regular whole wheat flour or all-purpose flour instead.
- All-Purpose Flour
- Baking Powder
- Baking Soda
- Salt
- Coconut Sugar: Or you can just use regular sugar.
- Butter: You will only need 1 tbsp (melted).
- Vanilla Extract
- Apple Cider Vinegar
- Dairy-Free or Regular Milk

Einkorn Pancakes
Ingredients
- 3/4 cup einkorn whole-wheat flour (or regular whole-wheat flour)
- 1/4 cup + 2 tbsp all-purpose flour
- 1/4 tsp salt
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1 1/2 tbsp coconut sugar (or regular sugar)
- 1 tbsp melted butter
- 1/4 tsp vanilla extract
- 1 tsp apple cider vinegar
- 1 cup milk (dairy-free or regular)
Instructions
- In a large mixing bowl, combine all of the dry ingredients (flour – sugar).Add in the wet ingredients (butter – milk). Combine just until the batter is mostly smooth. Some smallish lumps will remain.
- To a greased frying pan on low-medium heat, add about 1/4 cup or so of the batter (should make around six).Use a spoon to form the batter into a circle. Don’t spread it out too much, or the pancakes will be flatter and not as thick and fluffy.
- Cook on the first side for 2 minutes, and then flip the pancake over and cook for 1/2 – 1 minute extra. The pancakes should be fairly browned. Top with your favorite pancake toppings and enjoy!*Just a suggestion: If you’re not serving the pancakes right away, you can keep the cooked pancakes warm in the oven (180 – 200 degrees) while you’re finishing up the rest of the batch.Just place the pancakes on a large sheet pan lined with foil (for easier cleanup). And cover the top of the pancakes loosely with foil to prevent them from over baking or drying out. This is what I always do when making pancakes*
