Here are a couple of other yummy and super easy muffin recipes for you to check out before I go any further:

  • Oil-Free Cinnamon Oat Muffins: I accidentally forgot to add oil to the batter for these muffins. After I already put the pan in the oven, I remembered it. I then debated on throwing the muffins out or trying one.

It really wasn’t my intention to throw them out. So I went ahead and baked them anyway. I was kind of annoyed at myself for forgetting the oil. But I had to give those poor muffins a chance, didn’t I?

Let’s just say that my expectations for those muffins weren’t that high. I expected to throw them out due to an unappetizing and drab flavor due to a lack of oil. But, oh my gosh – that muffin tasted surprisingly amazing! Soft, fluffy and moist. And it tasted so good, considering that it was fat-free.
  • Chocolate Chip Almond Butter Muffins: These muffins are all kinds of yum, let me tell you! Every bite is full of melty chocolate chips and irresistible flavor. Moreover, these muffins are perfectly fluffy and moist – also really easy to make.

Lesson Learned

This peanut butter chocolate chip oatmeal muffins recipe came out perfect the first time around. But not all recipes come about this way. There are going to be times where a recipe won’t turn out as expected.

I have experienced this a few times during this food blogging journey so far. And I (and most food bloggers) can expect it to be a normal occurrence from time to time.

Don’t Lose Hope

I’ve learned my lesson. You (or something you hope to accomplish) may have a high chance of failing. From the outset, all may seem lost. But as I’ve found out, it may still be a success in the making. It just may different than what you originally planned. So don’t lose hope just yet!

Peanut Butter Oatmeal Chocolate Chip Muffins Ingredients

As you will see, the ingredients that you need for these muffins are your ordinary basic ingredients. If you’re not familiar with oat flour, most grocery and health food stores sell it in the baking section. It’s usually near the other packages of flour.

  • Oat Flour
  • All-Purpose Flour
  • Salt: Just a touch is needed to amplify the flavor of the muffins.
  • Quick-Cooking Oats: These particular oats work perfectly in these muffins as they’re smaller than regular oats. Therefore, your muffins won’t be overly chunky.
  • Baking Powder
  • Baking Soda
  • Cane Sugar: I would usually use coconut sugar in a recipe like this. But the regular (cane) sugar worked very well. Or you can go ahead and use the coconut sugar.
  • Chocolate Chips: Mini (preferable) or regular ones. Remember to use dairy-free chocolate chips for completely dairy-free muffins.
  • Dairy-Free or Regular Milk
  • Apple Cider Vinegar: This gives that extra oomph to the muffins. It helps them to rise better and to be super fluffy.
  • Vanilla Extract

I’m always appreciative of any comments or feedback on my recipes. If you’ve tried out this peanut butter oatmeal chocolate chip muffins recipe, thank you so much; and God bless!
