As you will see, the ingredients that you need for these muffins are your ordinary basic ingredients. If you’re not familiar with oat flour, most grocery and health food stores sell it in the baking section. It’s usually near the other packages of flour.

  • Oat Flour
  • All-Purpose Flour
  • Salt: Just a touch is needed to amplify the flavor of the muffins.
  • Quick-Cooking Oats: These particular oats work perfectly in these muffins as they’re smaller than regular oats. Therefore, your muffins won’t be overly chunky.
  • Baking Powder
  • Baking Soda
  • Cane Sugar: I would usually use coconut sugar in a recipe like this. But the regular (cane) sugar worked very well. Or you can go ahead and use the coconut sugar.
  • Chocolate Chips: Mini (preferable) or regular ones. Remember to use dairy-free chocolate chips for completely dairy-free muffins.
  • Dairy-Free or Regular Milk
  • Apple Cider Vinegar: This gives that extra oomph to the muffins. It helps them to rise better and to be super fluffy.
  • Vanilla Extract: Needed for ultimate flavor!

Ingredients
  

  • 1 cup oat flour
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp salt
  • 2 tbsp quick-cooking oats
  • 1 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup and a tbsp cane sugar (add an extra tsp if needed)
  • 1/4 cup dairy-free or regular chocolate chips
  • 1 1/4 cups and an extra 3 tbsp dairy-free or regular milk
  • 1/4 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 1/2 tsp apple cider vinegar

Instructions
 

  • Preheat oven to 350 degrees. Grease or oil 12 muffin cavities. Set aside..
  • In large mixing bowl combine all of the dry (flour-chocolate chips) ingredients well. *No large lumps should remain except for the chocolate chips*
  • In small bowl combine all of the wet ingredients (milk-apple cider vinegar). Combine everything until the batter is mostly smooth.
  • Divide batter evenly between the muffin cavities. Sprinkle with chocolate chips if desired and bake for 21-22 minutes until fully done. Let cool for a few minutes before serving.
