- Spelt Flour (or regular flour if preferred)

- Mini Chocolate Chips: I prefer to use mini chocolate chips in most of my baking recipes. They’re easier to distribute due to their smaller size.

- Apple Cider Vinegar: When I leave it out, my baked goods don’t seem to rise as much.
- Almond Butter: The distinct nutty flavor of this nut butter goes well with the chocolate chips.

- Milk: I used dairy-free almond milk, but you can use also use regular milk if you prefer.

Chocolate Chip Almond Butter Muffin Recipe
Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup spelt or all-purpose flour
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup dairy-free or regular mini chocolate chips
- 1/2 tsp vanilla extract
- 1 tsp apple cider vinegar
- 2 tbsp creamy almond butter
- 1/4 tsp cinnamon (optional)
- 1/4 cup and 2 1/2 tablespoons cane sugar
- 1 cup and 2 1/2 tablespoons dairy-free or regular milk
Instructions
- In a large mixing bowl thoroughly combine all the dry ingredients (flours, baking powder + soda, salt, and cinnamon if using).
- Add in the chocolate chips and wet ingredients (milk, vinegar, vanilla extract, and almond butter). Combine just till mostly smooth with a few smallish lumps.
- Divide batter equally between 10 greased muffin cavities (top with a few more chocolate chips if desired). Bake at 350 degrees for around 22 minutes.
